Zhang Huichun, 68, is a master of making Wuyi Rock Tea, a kind of Oolong tea.
1 That is why it got its name. Wuyi Rock tea is famous for its rich smell. The smell of this tea has never left him in his life.
His parents worked in a tea factory in Wuyi Mountain.
2 After finishing high school, he planted tea trees and picked tea leaves for the factory. In 1980, he learned to make the tea and opened his own factory.
To his surprise, the skills were difficult. After 10 years of learning, he could finally make the tea by himself. Zhang said there are 13 steps to make it, including drying, shaking, frying and roasting.
3 People have to decide the best time to stop by looking at the colour. Sometimes people stop after shaking it several times. However, sometimes it can be hundreds of times.
The last step—roasting is also important. It decides the quality. With three steps, it usually takes more than 20 hours. Each step needs a temperature between 125°C and 155°C.
4 Every 50 minutes, you have to turn over the leaves, or it might burn.
He is already a master, but Zhang said he is still learning. “The best part is that every step is full of changes—different tea trees, weather and temperatures.”
In recent years, Zhang has often worked with schools to train tea makers. He said, “
